Drop references to $haikuVersion.

* Referring the current haiku version explicitly is not needed, since
the RequiresUpdater takes care of setting the version of Haiku used
for building a package.

It is bailing out somewhere after getting patched, but I can't tell where since the error
message is very cryptic and long.

Cleanup: fix names of recipe and patch files.
...
* this fixes the wrong recipe names introduced by myself in #d525fee
* adjust patch names to match corresponding recipes
* additionally: create 'additional-files' folders as hint to some
ports that do not have a proper recipe yet
